Chinese Chilli Marianded Chicken

This is one of my favorite cheap flavoursome meals.

Chicken Thighs cut into bite size pieces (I use one thigh per person)

Chilli Pepper cut small (if you don’t like too much heat de-seed)

Garlic Clove cut small (1 or 2 cloves depending on your preference)

A thumb size piece of Ginger cut small (I keep my Ginger in the freezer and grate it straight from the freezer)

1 tbls Cooking Oil

1 tbls Soya Sauce (dark or light)

1 tsp Rice Vinegar

Mix all above in a dish, cover and put in fridge to marianade.  (I marianade for around 4 to 5  hours, but you can do less if you want)

Add 1tbs of Cooking Oil to Wok or Frying Pan

Tip the chicken and marianade into the pan and cook for around 5 mins.

Add Sliced Peppar, spring onions and mushrooms.  (I use an orange pepper purely because it adds such a wonderful colour in contrast with the spring onions)

Cook for a further 10 mins making sure you move it around the pan.

Serve with noodles.
